you could be creative and present loki in a way that fits all of the sins, even sloth and gluttony, like you mentioned with how he could fit into sloth some ways above.

gluttony can be played as working side by side in a person with greed. loki is a greedy character who wants power and attention, and he is too prideful to accept his own flaws even when he's well aware of how they can fuck up his plans, but he also overindulges in what he can do, how much he should be involved in completing his plan and could be called a glutton for failure because of it. he goes for too much too fast and that's why his plans fail. it's when he's quiet, unassuming, and plotting for the long haul that anything works out for him (such as the end of thor: the dark world).

loki is a "go big or go home" type of person. he decides to completely immerse himself in what shitty person he can be and enjoys doing terrible things. it's like he's gluttoning himself on the other sins.

the whole big scene in avengers in germany, and the way he just has to be there at stark towers to show up the avengers and thus gets the shit beat out of him by the hulk is a mix of pride, greed and gluttony together. it's the overindulgence to his own selfish wants and satisfaction despite the fact it's actually dumb and will fuck up his goals that could put fit him into that sin group.

he doesn't have to manipulate and use others as much as he does, but like you said, he enjoys not getting his hands dirty. he enjoys sitting back and letting others rip themselves apart for his gain. so in the end you could throw loki into a group for all of the 7 sins because in one way or another each one comes out with loki as an antagonist.
