Rose has always been a little silly, in desperate need of relaxing her iron grip on her reality, and was predisposed towards both acting older and more mature than she is and towards at least trying out drinking (both curiosity about her mom's drinks, and in the doomed timeline, turning to it for comfort.)
I don't see how this is completely out of nowhere, and think people who think it is have managed to buy into Rose's Super Mature Smartperson I Know Everything Yeah!!! facade, kind of like the people who honestly believe Dave has ever at any point in his life actually been really cool in any way but by accident.
